I love having breakfast with the family on Sundays. All together (including the cuddly toys and Tom’s cars) at the big table and start the day relaxed. We usually have a colorful mix of savory and sweet dishes. Waffles, pancakes, omelets or the wonderful spinach roll. Today I brought you a healthy and quick breakfast pizza . Perfect for Sunday brunch or as a sweet snack in between. Can’t every day be a Sunday?

For the delicious breakfast pizza you only need three ingredients and 10 minutes preparation time. The “dough” is made from bananas, oatmeal and maple syrup. By the way, you can bake delicious breakfast biscuits using the same principle.

Ripe bananas – perfect for your pizza

I used to get annoyed when the bananas turned completely brown again. You can continue to use overripe bananas so great. For example for quick banana ice cream (cut bananas into slices, put them in the freezer for 2 hours and then puree) or for this great breakfast pizza.

The healthy pizza is then topped with a cream made from Greek yogurt, vanilla, cinnamon and maple syrup.

Fresh berries and fruits, but also nuts, desiccated coconut or cocoa nibs are suitable as a topping. There are no limits to your imagination. 🙂 I usually use everything that the fridge can offer. Today it was cherries, currants from the garden, blueberries, nectarines, pears and plums.

Ingredients

Ingredients for breakfast pizza:

  • ▢ 2 ripe bananas
  • ▢ 160 g fine oat flakes
  • ▢ 1 tbsp maple syrup

Ingredients for the topping:

  • ▢ Fruit of your choice
  • ▢ 4 tbsp Greek yogurt
  • ▢ 1/2 teaspoon ground vanilla
  • ▢ 1 pinch of cinnamon

Preparation

  • Preheat the oven to 180 degrees.
  • Mash the bananas with a fork and mix with the oatmeal and maple syrup. Put the mixture on a baking tray lined with baking paper (I use a round tray) and bake in the preheated oven for 15-20 minutes.
  • In the meantime, cut the fruit into bite-sized pieces. Then mix the yogurt with the ground vanilla, cinnamon, and maple syrup.
  • Take the banana and oatmeal pizza out of the oven and let it cool. Now brush with yogurt and garnish with the fruit.
